做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
