做法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖(mèn )。
