做法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏米(mǐ )。用清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下盐(yán )调味(wèi )即可品尝。 -
