做法:洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的(de )清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一(yī )个半(bàn )小时,下盐调味即可品尝。
