做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的(de )时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
