做法:洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水把(bǎ )陈(chén )皮泡软,拍(pāi )裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫(jì )鱼和其(qí )他(tā )材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小时,下(xià )盐调味即可品尝。
