做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转(zhuǎn )中火。煮到水快(kuài )熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
