做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加(jiā )入(rù )盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
