做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡(pào )软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放(fàng )两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的(de )清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半(bàn )小时(shí ),下(xià )盐调味(wèi )即可品尝。
