做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
