做法:洗(xǐ )净宰好鲫鱼(yú ),洗净淮山和(hé )薏米(mǐ )。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上擦一(yī )遍,放两勺油,待油六成(chéng )热(rè )下(xià )鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料(liào ),武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
