做(zuò )法:春笋切(qiē )成(chéng )片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀(yún ),加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
