做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅(guō )盖焖。
