做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放两勺油(yóu ),待油六成(chéng )热(rè )下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品(pǐn )尝。
