做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖(mèn )。
