做法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油(yóu )六成热下(xià )鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一(yī )个半小时(shí ),下盐调味即可品尝(cháng )。
