做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小火煲一个(gè )半(bàn )小时,下盐调(diào )味(wèi )即可品尝。
