做法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
