做法:春(chūn )笋切成片(piàn )后加(jiā )少许盐(yán )捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
