做法(fǎ ):洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其(qí )他材料,武(wǔ )火(huǒ )煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐(yán )调味即可品尝。
