做法:春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
