做法:春笋切成片后加(jiā )少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
