做(zuò )法(fǎ ):春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
