做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到(dào )水快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
