做法(fǎ ):春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
