做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬(áo )干的(de )时(shí )候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
