做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
