做法:春笋切(qiē )成(chéng )片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
