做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
