做法:洗净宰好鲫(jì )鱼(yú ),洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅上(shàng )擦(cā )一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸(fèi ),转中小火煲一(yī )个半小时,下(xià )盐调(diào )味即可品(pǐn )尝。
