做(zuò )法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅(guō ),用姜块在锅(guō )上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一(yī )个半小时,下(xià )盐调味即可品尝。
