做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
