做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
