做法:洗净宰好(hǎo )鲫(jì )鱼(yú ),洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦一遍,放两(liǎng )勺油,待油六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼(yú )和其(qí )他材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下(xià )盐调味即可品尝。
