做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
