做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
