做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖(mèn )。
