做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少量清水半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
