做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到水快(kuài )熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
