做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
