做(zuò )法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
