做(zuò )法:洗净宰好鲫鱼(yú ),洗净(jìng )淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲(bāo )一个(gè )半小时,下盐调味即可品尝。
