做法:春笋切成片(piàn )后加少(shǎo )许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加入少量(liàng )清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快(kuài )熬干的(de )时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
