做(zuò )法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡(pào ),生(shēng )姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
