做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半(bàn )掩住(zhù )春笋,盖(gài )上锅盖大火(huǒ )煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖(gài )上(shàng )锅(guō )盖焖。
