做法:春笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的(de )时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
