做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放(fàng )入(rù )煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一个(gè )半(bàn )小时,下盐调味(wèi )即可品尝。
