做法:洗净宰(zǎi )好鲫鱼(yú ),洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一(yī )遍,放(fàng )两勺油,待油六成热下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐调味即(jí )可品尝。
