做法:春笋切成片后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
