做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
